From Spices to Success: The Story of Parvathys Kitchen
Rachael and Steven Paltrow’s story is one of faith, culture, and shared dreams. Hailing from Durban, South Africa, Rachael grew up in a vibrant Indian community shaped by hospitality and rich culinary traditions. Inspired by family memories and her love for cooking, she studied hospitality and culinary arts before moving to the U.S. and working at the Hard Rock Hotel in Orlando.
Steven’s journey began in Puerto Rico, where he learned to cook traditional Spanish dishes with his grandmother. His diverse heritage and passion for food led him to culinary roles and eventually into food entrepreneurship.
Their paths crossed at the Hard Rock Hotel, where a blind date arranged by Steven’s brother sparked an instant connection. Together, they built a family and shared a love for food and hospitality.
In 2014, encouraged by Steven’s mother, Rachael started selling homemade Indian spice blends at a local farmers market in DeLand, Florida. The spices were a hit, and soon they added small Indian dishes, quickly growing beyond their home kitchen.
By 2015, Parvathys Kitchen launched as Central Florida’s only Indian cuisine food truck, named after Rachael’s mother. For nearly a decade, their flavorful dishes like chicken tikka masala and vegan curries became a Friday night staple at Artisan Alley.
In December 2023, the Paltrows realized a dream by opening a take-out restaurant near their food truck’s usual spot. Parvathys Kitchen now serves the Downtown DeLand community several days a week, blending family teamwork with real, caring cooking.
Running a full-time restaurant is a bigger operation than a food truck, but after nearly 10 years of experience, the Paltrows knew exactly what their customers love. They are excited to welcome both their farmers market regulars and new faces to the restaurant.
On a regular night, you will find Rachael cooking, taking orders, Josh and Sarah running the tray line, making plates, and Steven cooking breads and washing dishes. Ms. Lura and Ms. Wood are the faces behind the scenes on prep days.
The Paltrows are deeply thankful to God for every open door and are committed to sharing delicious, authentic Indian food with love.
